Sticky Honey, Garlic & Rosemary Lamb BBQ Chops

Ingredients
  

  • 8 lamb BBQ chops
  • 3 tablespoons olive oil
  • 3 cloves garlic minced
  • 2 tablespoons honey
  • 2 tablespoons soy sauce
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • 1 teaspoon dried rosemary
  • ½ teaspoon smoked paprika
  • Salt and black pepper to taste

Method
 

  1. In a large bowl, whisk together the olive oil, garlic, honey, soy sauce, Worcestershire sauce, lemon juice, Dijon mustard, rosemary, smoked paprika, salt and pepper.
  2. Add the lamb BBQ chops and toss well to coat. Cover and marinate for at least 15 minutes, or up to 4 hours for extra flavour.
  3. Preheat a BBQ or grill to medium-high heat.
  4. Cook the lamb chops for 4–5 minutes per side, brushing with any remaining marinade as they cook.
  5. Continue cooking until the chops are nicely caramelised and cooked through.
  6. Remove from the heat and allow to rest for 5 minutes before serving.
  7. Serve with roasted chat potatoes, a fresh garden salad or grilled vegetables.

Notes

For the best flavour, marinate the chops for several hours before cooking.
If using a BBQ, keep an eye on the chops as the honey glaze can caramelise quickly.
A squeeze of fresh lemon just before serving helps balance the richness of the lamb.
Leftover chops are delicious sliced through salads, wraps or grain bowls the next day.
