- In a large bowl, whisk together the olive oil, garlic, honey, soy sauce, Worcestershire sauce, lemon juice, Dijon mustard, rosemary, smoked paprika, salt and pepper.
- Add the lamb BBQ chops and toss well to coat. Cover and marinate for at least 15 minutes, or up to 4 hours for extra flavour.
- Preheat a BBQ or grill to medium-high heat.
- Cook the lamb chops for 4–5 minutes per side, brushing with any remaining marinade as they cook.
- Continue cooking until the chops are nicely caramelised and cooked through.
- Remove from the heat and allow to rest for 5 minutes before serving.
- Serve with roasted chat potatoes, a fresh garden salad or grilled vegetables.
Notes
For the best flavour, marinate the chops for several hours before cooking.
If using a BBQ, keep an eye on the chops as the honey glaze can caramelise quickly.
A squeeze of fresh lemon just before serving helps balance the richness of the lamb.
Leftover chops are delicious sliced through salads, wraps or grain bowls the next day.
